Preparation:
Mix flour with sugar and salt. Add the cold chopped butter and rub it into the flour until crumbly. Add the egg and wine or vinegar and knead into a smooth dough. Wrap it in film and leave it in the refrigerator for 30 minutes.
Thoroughly grind the ricotta through a sieve to remove any lumps. Add powdered sugar, vanilla and mix well. Then add chocolate chips and candied fruits as desired. Leave in the refrigerator until use.

Preparation:
Divide the dough into small pieces and roll them into thin circles. Wrap each circle around a special metal cannoli mold.
Fry the tubes in a large amount of vegetable oil until golden brown. Carefully remove the fried dough from the pan and leave to cool on a paper towel.
Fill the cooled tubes with cream using a pastry bag.
Sprinkle the cannoli with chopped pistachios, powdered sugar and candied fruit.
Note: Cooking cannoli requires patience and care, especially when frying the tubes, so that the dough does not burn and cooks evenly. Serve cannoli as a dessert to end an Italian lunch or dinner and they are sure to be the highlight of your table!
